Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch (or similar 8x8/9x9) baking dish with butter or nonstick spray.
If using large strawberries, hull and quarter them so pieces are roughly the size of the other berries. Measure 4 cups total fruit.
Combine filling
In a medium bowl, toss the berries with 1/2 cup granulated sugar, 2 tsp cornstarch, 1 tbsp lemon juice, 1/2 tsp vanilla extract, and 1/4 tsp ground cinnamon until evenly coated. Let sit 5 minutes to macerate so juices begin to release.
Pour the fruit mixture into the prepared baking dish and spread into an even layer.
In a large mixing bowl, cream 1/2 cup (1 stick) softened unsalted butter with 1/2 cup granulated sugar and 1/4 cup light brown sugar until light and fluffy (about 2–3 minutes with a hand mixer or 4–5 minutes by hand).
Beat in 1 large egg and 1 tsp vanilla extract until fully incorporated.
In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 1/2 tsp baking powder, and 1/4 tsp salt.
Fold in 3/4 cup semisweet chocolate chips until evenly distributed.
Using a small ice cream scoop or two spoons, drop rounded tablespoon-sized mounds of cookie dough over the berry layer, spacing them to cover the surface as evenly as possible. The dough will spread slightly during baking; it's fine if some fruit remains visible between mounds.
Optional: sprinkle a few extra chocolate chips on top of the mounds for appearance.
Bake in the preheated 350°F (175°C) oven for 30–35 minutes, or until the cookie topping is golden brown and the fruit filling is bubbling around the edges. If the topping browns too quickly but the center is not done, tent loosely with aluminum foil and continue baking until cooked through.
Remove from oven and let rest 10–15 minutes to allow filling to thicken. The cobbler can be served warm or at room temperature.
To Serve
Scoop servings onto plates and top with vanilla ice cream or whipped cream if desired. Let guests spoon up juicy fruit and cookie topping together.
Store any leftovers covered in the refrigerator for up to 3 days; reheat gently in a 325°F (160°C) oven until warmed through.
