Preparation
Wash and cut
Wash all vegetables under cold running water. Peel and slice carrots into 1/4-inch diagonal rounds. Cut broccoli and cauliflower into bite-sized florets. Trim snap peas and slice red bell pepper into thin strips. Peel and thinly slice or finely chop the onion.
Mince garlic and grate fresh ginger. Measure out soy sauce, lemon juice, and honey. Have sesame seeds and herbs ready for finishing.
Cook Vegetables
Blanch firmer vegetables (optional but recommended)
Bring a medium pot of salted water to a boil. Add carrot slices and cauliflower florets and blanch for 2 minutes. Use a slotted spoon to transfer them to an ice bath (bowl of cold water with ice) to stop cooking. After 1 minute, drain and set aside. This step reduces total skillet time and keeps colors bright.
Cook vegetables
Add broccoli florets, snap peas, and red bell pepper to the skillet. Stir-fry 2–3 minutes, tossing frequently. Add the blanched carrot and cauliflower pieces and continue to stir-fry for another 2 minutes until vegetables are crisp-tender. If the pan looks dry, add a splash (1–2 tsp) of water to create steam and help cook through without browning too much.
Finish & Serve
Stir in soy sauce, lemon juice, and honey. Season with salt and black pepper. Toss well so the sauce coats all vegetables. Cook another 30–60 seconds to heat through and let flavors meld.
Taste and adjust seasoning: add more salt, soy sauce, or lemon juice as desired. If you like heat, sprinkle red pepper flakes.
Remove from heat. Sprinkle toasted sesame seeds and chopped fresh parsley or cilantro over the vegetables. Serve immediately as a side dish or over rice/quinoa for a light main course.
