Bacon & Mushrooms
Slice mushrooms thin. In the same skillet over medium-high, add 1 tablespoon butter. When foaming subsides, add mushrooms and sauté without crowding until they release moisture and begin to brown, about 4–5 minutes.
Burger
Form the half-pound ground beef into a single loose patty about 4–5 inches wide and slightly thicker in the center (the patty should be slightly larger than the bun to account for shrinkage). Avoid overworking the meat—press just enough to shape.
Season both sides of the patty with 3/4 tsp salt and 1/2 tsp black pepper just before cooking.
Preheat a heavy skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil or a small knob of butter to coat the surface.
Place the patty on the hot surface and cook undisturbed for 4–5 minutes to develop a crust. Flip once and cook the second side 3–4 minutes for medium doneness (adjust 1–2 minutes for rarer or well done).
After flipping and with about 1–2 minutes remaining, layer the cheeses on the cooked side: first two slices cheddar and then two slices American. Cover the skillet with a lid for 30–60 seconds to help the cheese melt.
Bun & Assembly
Spread 1 tablespoon mayonnaise on the bottom bun and 1 tablespoon mayonnaise mixed with 1 tablespoon mustard on the top bun (or spread mustard on top bun and mayo on bottom if preferred).
Place the toasted bottom bun on a plate. Add lettuce leaf, then the double-cheese burger patty (cheese-side up), then distribute the chopped bacon evenly over the melted cheese.
Top with the mustard-mayo bun half, press gently, and serve immediately.
Finishing & Serving
Optional: let the assembled burger rest 1 minute to let juices redistribute. Serve with fries or chips. Provide extra pickles and condiments on the side if desired.
