Prepare mushrooms

Wipe mushrooms clean with a damp cloth or give a quick rinse and pat dry. Trim and discard any tough stems; leave small mushrooms whole and halve only very large ones so pieces are uniform in size (approximately bite-sized).

Set up dredging station

In a shallow bowl or plate, combine the 3 tablespoons flour, 2 tablespoons cornmeal, 0.5 teaspoon paprika, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and 0.5 teaspoon onion powder. In a second bowl, whisk together 2 eggs, 1/2 cup buttermilk and 1 teaspoon hot sauce (if using). In a third shallow bowl, mix 1 cup panko breadcrumbs with 1/4 cup finely grated Parmesan (optional).

Bread the mushrooms

Working in batches to avoid crowding, toss mushrooms lightly in the seasoned flour mixture to coat and shake off excess. Dip each floured mushroom into the egg-buttermilk mixture, letting excess drip off, then press into the panko-Parmesan mixture to fully coat. Place breaded mushrooms on a tray in a single layer while you finish the rest. For a thicker crust, repeat the egg dip and panko step a second time.

Heat oil

Pour about 3–4 cups of vegetable oil into a deep, heavy pot or Dutch oven (enough to give at least 2 inches depth) and heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping one breadcrumb into the oil — it should sizzle and brown within about 30–45 seconds.

Fry mushrooms

Fry the breaded mushrooms in small batches (do not overcrowd) for 2–3 minutes, turning as needed, until golden brown and crisp. Smaller mushrooms may take 2 minutes, larger pieces up to 3–4 minutes. Use a slotted spoon or spider to remove mushrooms and transfer them to a wire rack set over a sheet pan or to a paper towel–lined tray to drain. Sprinkle with 1/2 teaspoon coarse finishing salt while still hot.

Keep warm

If frying multiple batches, keep finished mushrooms warm in a 200°F (95°C) oven on a sheet pan while you finish frying the remaining batches so they stay crisp.

Garnish

Scatter chopped fresh parsley over the fried mushrooms just before serving.

Sauces (choice of ranch or gravy)

Heat gravy if using: warm prepared or homemade beef/mushroom gravy in a small saucepan over low heat, stirring occasionally, until simmering gently. Keep warm. Serve ranch at room temperature or chilled in a small ramekin. Offer both sauces on the side so diners can choose.
