Chill glass

If desired, chill a highball or Collins glass in the freezer for 5–10 minutes or fill with ice and set aside while you assemble ingredients.

Roll the mint leaves gently between your palms to bruise and release aroma; set aside a sprig for garnish.

Mixing

Combine base spirits and modifiers

In a cocktail shaker, add the white rum, fresh lime juice, simple syrup, creme de menthe, and white crème de cacao (if using).

Add ice and shake

Fill the shaker with ice (enough to chill well) and shake vigorously for 10–12 seconds until the shaker is frosty and well chilled.

Prepare glass

Discard ice from the chilled glass if used. Add about 1 cup of crushed ice to the glass.

Strain and top

Double-strain the shaken mixture over the crushed ice into the prepared glass to remove small ice shards and any mint bits. Top with approximately 1.5 oz club soda to add effervescence.

Gently stir once with a bar spoon to integrate the soda without flattening the fizz.

Slap the remaining mint sprig once between your hands to release aromatics, then tuck it into the glass alongside a lime wheel on the rim.
