Optional cherry
If using a maraschino or brandied cherry, thread it on a pick and rest it on top of the ice next to the orange peel.
Build cocktail
Add the simple or demarara syrup to a mixing glass or directly into the prepared old-fashioned glass.
Add the Angostura bitters (2 dashes) and the optional orange bitters (1 dash) to the syrup.
Pour 2 oz of bourbon or rye whiskey over the syrup and bitters.
If using a mixing glass: add a large handful of ice and stir gently for 15–25 seconds until well chilled and slightly diluted (should coat the back of a spoon). Then strain over the large ice cube in the old-fashioned glass. If building directly in the serving glass: add a couple of standard ice cubes, stir gently for 10–15 seconds to combine and chill, then remove those cubes and replace with the large cube or sphere.
Give the drink a final gentle stir in the serving glass to integrate the expressed orange oil.
Garnish with the expressed orange peel and optional cherry. Serve immediately.
