Muddle
Place the fresh mint leaves and simple syrup in the bottom of a cocktail shaker or mixing glass. Gently muddle 4–5 times to release the mint oils — avoid shredding the leaves into bits.
Build
Add the vodka, fresh lime juice and the creme de menthe to the shaker with the muddled mint. Add a handful of ice (enough to chill but not over-dilute) and give the mixture 6–8 gentle shakes to combine and chill.
Strain & Finish
Fill a chilled copper mug (or highball glass) with crushed ice or cubes. Double-strain the shaken mixture into the mug to keep mint fragments out. Top with ginger beer (about 4 oz). Gently stir once or twice to integrate the ginger beer without flattening its carbonation.
Garnish & Serve
Garnish with a lime wheel or wedge on the rim and a fresh mint sprig. Optionally clap the mint between your palms briefly before garnishing to release aromatic oils. Serve immediately with a reusable straw.
