House-made Quick Pickles
Make pickling brine
In a small saucepan combine rice vinegar, apple cider vinegar, granulated sugar, fine sea salt, mustard seeds, and red pepper flakes (if using). Warm over medium heat just until sugar and salt dissolve — about 1–2 minutes. Remove from heat and let cool slightly.
Pickle cucumbers and shallot
Place thinly sliced cucumbers and shallot in a heatproof bowl or jar. Pour warm pickling brine over them, pressing slices down so they’re submerged. Let cool to room temperature, then cover and refrigerate for at least 30 minutes (up to 8 hours) before assembling. This yields crisp, tangy quick pickles.
Herb Aioli
In a medium bowl combine mayonnaise, minced garlic, lemon juice, Dijon mustard, chopped parsley, chives, tarragon (if using), salt, and pepper. Whisk until smooth and tasting balanced. Adjust lemon, salt or herbs to preference. Refrigerate until ready to use. Makes enough to generously top 30 mini burgers.
Wagyu Beef Patties
Form patties
Divide the ground Wagyu into 30 equal portions (about 1.6 oz / 45 g each). Gently form each portion into a small patty about 2 1/2 inches wide and roughly 1/2 inch thick, making a slight dimple in the center of each patty with your thumb to prevent doming during cooking. Handle the meat as little as necessary to avoid compacting it.
Season patties
Lightly brush or sprinkle each patty with Worcestershire sauce, then season both sides with fine sea salt and freshly ground black pepper just before cooking.
Cook patties
Heat a large skillet or griddle over medium-high heat until very hot. Add 1 tablespoon of softened butter and swirl to coat. Cook patties in batches without crowding: 1–2 minutes per side for medium-rare to medium depending on thickness, flipping once. If adding cheddar, place a small slice on each patty in the last 20–30 seconds of cooking and cover briefly to melt. Add more butter to the pan between batches as needed. Transfer cooked patties to a baking sheet and tent loosely with foil to keep warm.
Brioche Buns & Assembly
Toast buns
Preheat oven to 350°F (175°C) or use a skillet. Brush cut sides of mini brioche buns with melted butter. Arrange cut-side up on a baking sheet and toast in the oven for 5–7 minutes until golden (or toast in a skillet over medium heat until lightly browned). Keep warm.
Assemble burgers
Spread about 1 teaspoon of herb aioli on the bottom half of each toasted bun. Place a Wagyu patty (with melted cheddar if using) on top. Add 2–3 thin pickle slices and a small pinch of microgreens. Finish with a light sprinkle of coarse kosher salt on the top bun interior if desired, then close sandwich and secure with a toothpick or mini skewer. Repeat for all 30 sliders.
Finishing & Serving
Arrange miniature gourmet burgers on a platter. Serve immediately while patties are warm and buns are slightly crisp. Provide extra herb aioli and pickles on the side if desired. Estimate serving 30 mini burgers as appetizers for 10–15 people (2–3 each) or as small plated portions.
