Prepare sugar syrup

Combine the water and granulated sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture just comes to a simmer, about 2–3 minutes. Remove from heat and let cool to room temperature (about 15 minutes). If using corn syrup or agave, stir it into the warm syrup so it dissolves evenly.

Puree mango

While the syrup cools, place the mango flesh in a blender or food processor. Add the lime juice and a pinch of fine sea salt. Blend until completely smooth, about 1–2 minutes. Scrape down sides as necessary to ensure a silky puree.

Combine and adjust sweetness

Pour the cooled syrup into the mango puree. Taste and adjust: if the mango is very sweet, add an additional teaspoon of lime juice or another pinch of salt to brighten flavors; if too tart, add up to 1 tablespoon more sugar dissolved in a little warm water. The final mixture should be vibrant and balanced—slightly sweeter than you want the finished sorbet because freezing dulls sweetness.

Chill mixture

Cover the mango mixture and chill in the refrigerator until very cold, at least 2 hours or up to overnight. Chilling ensures a smoother texture when churned.

Churn

Once thoroughly chilled, pour the mango mixture into an ice cream maker and churn according to the manufacturer's instructions, usually 20–25 minutes, until it reaches a soft-serve consistency.

Freeze to set

Transfer the churned sorbet to an airtight container, pressing a piece of plastic wrap directly on the surface to prevent ice crystals. Freeze at least 3 hours to firm up to scoopable texture. For the best texture, let sit at room temperature 5–7 minutes before scooping.

Mango Coulis (Drizzle)

Make coulis

Place 1 cup mango flesh or 1 cup of reserved mango puree into a blender with the powdered sugar and lemon juice. Blend until smooth. If the coulis is too thick for drizzling, add water 1 teaspoon at a time (up to 15 ml) until it reaches a pourable consistency. Taste and adjust sweetness or acidity as needed.

Strain (optional)

For a silky coulis, pass the blended mixture through a fine-mesh sieve, pressing with a spatula to remove any fibers. Refrigerate until ready to serve.

Garnish & Serve

Plate sorbet

Scoop 2–3 portions (about 1/2 cup each) of mango sorbet into chilled dessert bowls or glasses.

Add coulis and garnish

Drizzle 1–2 tablespoons of mango coulis over each scoop. Top with 2 fresh mint leaves and a thin mango slice or wedge. Finish with a light dusting of lime zest if using.

Serve

Serve immediately. If making ahead, keep sorbet in the freezer and remove 5–7 minutes before serving to allow scooping.
