Prepare the Garlic

In a small pan, heat 1 tablespoon of olive oil over low heat. Add the garlic cloves and cook slowly until they are soft and golden, about 15 minutes. Remove from heat and set aside.

Sauté the Mushrooms

In a large skillet, heat the remaining tablespoon of olive oil and the butter over medium heat. Add the local mushrooms, season with salt and black pepper, and sauté until they are browned and tender, about 5-7 minutes.

Add Garlic and Cheese

Once the mushrooms are cooked, add the confit garlic to the skillet and stir well to combine. Sprinkle the queso fresco cheese over the mushroom mixture and allow it to melt slightly, about 2-3 minutes.

Toast the Bread

While the cheese is melting, toast the bread slices until golden brown. Cut into points.

Serve

Serve the mushroom and cheese skillet hot, garnished with fresh parsley, alongside the toast points for dipping.
