Make the Risotto Cakes
In a bowl, combine cooked parmesan risotto, egg, bread crumbs, and parmesan cheese. Mix until well combined. Form into patties and refrigerate for 30 minutes.

Preparing the Sauce
Make the Demi-Glace
In the same skillet, add chopped shallots and sauté until translucent. Add port wine and let it reduce by half. Stir in the beef demi-glace and simmer until slightly thickened. Adjust seasoning if necessary.

Sauté the Vegetables
In a separate pan, add a little olive oil and sauté the seasonal mushroom blend until golden. Add cherry tomatoes and asparagus, cooking until tender. Season with salt and pepper to taste.

Serve
On each plate, place a risotto cake, top with elk medallions, and drizzle with port shallot demi-glace. Add sautéed vegetables on the side.
