Grilling the Steak

Prepare the Ribeye

Season the ribeye steaks generously with salt and black pepper on both sides. Let them sit at room temperature for 30 minutes.

Preheat the Grill

Preheat your grill to high heat (about 450°F to 500°F).

Grill the Steak

Place the ribeye steaks on the grill. Cook for 4-5 minutes on one side, then flip and cook for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

Rest the Steaks

Remove the steaks from the grill and let them rest for at least 5 minutes before serving.

Making the Demi Glace

Sauté Shallots

In a saucepan, melt the butter over medium heat. Add the minced shallots and sauté until translucent.

Add Liquids

Pour in the red wine and beef stock. Bring to a boil.

Add Flavorings

Stir in the fresh rosemary and whole black peppercorns. Reduce heat and let simmer until the sauce is reduced by half, about 15-20 minutes.

Strain the Sauce

Strain the demi-glace through a fine-mesh sieve to remove solids. Keep warm until ready to serve.
