Prepare the Coating
In a shallow dish, combine cornmeal, flour, cayenne pepper, paprika, garlic powder, salt, and black pepper. Mix well.
Soak the Catfish
Place the catfish fillets in a separate shallow dish and pour buttermilk over them, ensuring they are thoroughly coated. Let them soak for about 15 minutes.
Coat the Fillets
After soaking, remove the fillets from the buttermilk and let excess liquid drip off. Dredge each fillet in the cornmeal mixture, pressing gently to adhere the coating.
Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
