Mousse Preparation
Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and espresso. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip. Set aside.
Prepare the Egg Yolks
In another bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of salt. Mix until the mixture is pale and slightly thickened.
Combine Mixtures
Gradually fold the melted chocolate mixture into the egg yolk mixture until well combined.
Fold in Cream
Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
Chill the Mousse
Spoon the mousse into serving dishes or glasses. Refrigerate for at least 2 hours or until set.
Serve
Serve the mousse chilled, optionally topped with whipped cream or chocolate shavings.
