Cooking Instructions

1

Prepare the Chicken

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken breast and cook until browned on both sides, about 5-7 minutes. Remove the chicken and set aside.

2

Sauté Vegetables

In the same pot, add the chopped onion and bell peppers. Sauté until the onion is translucent, about 4-5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

3

Add Remaining Ingredients

Return the chicken to the pot. Add the diced tomatoes, black beans, kidney beans, chicken broth, minced chipotle peppers, chili powder, cumin, salt, and black pepper. Stir well to combine.

4

Simmer the Chili

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.

5

Shred the Chicken

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir until combined.

6

Serve

Ladle the chili into bowls and garnish with fresh cilantro. Serve hot.
