Prepare the Crostini

Preheat the grill or oven to 400°F (200°C). Brush sliced baguette with olive oil and season with salt and pepper. Grill or bake until golden brown and crispy, about 5-7 minutes. Set aside.

Cook the Chorizo

In a large pot over medium heat, add the diced chorizo and cook until browned and slightly crispy, about 5-7 minutes. Remove chorizo and set aside, leaving the drippings in the pot.

Sauté Garlic and Tomatoes

In the same pot, add minced garlic and roasted tomatoes. Sauté for 2-3 minutes until fragrant.

Steam the Mussels

Add the cleaned mussels to the pot and pour in the 10 Torr pilsner. Cover the pot and steam for about 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

Combine Ingredients

Once the mussels are cooked, stir in the cooked chorizo and chopped cilantro. Season with salt and black pepper to taste.

Serve

Serve the beer steamed mussels hot with grilled crostini on the side for dipping.
