Cook the Rice

If not using leftover rice, cook 2 cups of rice according to package instructions. Let it cool.

Prepare Ingredients

Dice the carrots, bell pepper, and green onions. If using chicken or tofu, ensure they are cooked and diced.

Stir-Fry the Vegetables

In a large skillet or wok, heat vegetable oil over medium-high heat. Add the diced carrots and bell pepper. Stir-fry for about 3-4 minutes until they begin to soften.

Add Peas and Protein

Add the frozen peas and your choice of protein (chicken or tofu) to the skillet. Continue stir-frying for another 3 minutes.

Add Rice and Seasoning

Add the cooked rice to the skillet. Pour in the soy sauce, add salt, and pepper. Mix well to combine all ingredients.

Scramble the Eggs

Push the rice and vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Mix everything together.

Finish with Green Onions

Stir in the chopped green onions and give everything a final mix. Serve hot.
