Preparation Steps
Prepare the Noodles
Soak the thin rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.
Cook the Tofu
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the cubed tofu and fry until golden brown on all sides. Remove and set aside.
Cook the Chicken
In the same skillet, add another tablespoon of oil. Add the sliced chicken breast and cook until no longer pink, about 5-7 minutes.
Combine Ingredients
Add the soaked rice noodles and cooked tofu back into the skillet. Toss everything together.
Add the Sauce
Pour in your favorite Pad Thai sauce (which typically includes tamarind paste, fish sauce, sugar, and chili). Stir well to coat all ingredients evenly.
Finish and Serve
Remove from heat, stir in the chopped chives, and top with crushed peanuts. Serve warm.
