Select and harvest the ripe Cabernet Sauvignon grapes from the Champoux Vineyard.

Harvesting the Grapes

Crush the harvested grapes to release the juice.

Crushing the Grapes

Transfer the crushed grapes and juice into a fermentation vessel. Add malolactic bacteria and potassium metabisulfite to the mixture. Allow fermentation to occur for approximately 10-14 days at controlled temperatures.

Fermentation

After fermentation, press the grape skins to extract the remaining juice.

Pressing

Transfer the wine into French oak barrels for aging. Age for at least 12-18 months, tasting periodically.

Aging

Once aged to perfection, bottle the wine in clean glass bottles, sealing them properly.
