Prepare the Ginger
Peel and finely grate the fresh ginger root.
Mix the Sauce
In a mixing bowl, combine the grated ginger, soy sauce, honey, rice vinegar, minced garlic, sesame oil, and red pepper flakes. Stir until well mixed.
Thicken the Sauce
In a small bowl, mix the cornstarch with water until smooth. Add this mixture to the sauce and stir well.
Cook the Sauce
Transfer the sauce to a small saucepan and heat over medium heat. Stir continuously until the sauce thickens, about 5-7 minutes.
Cool and Store
Remove the sauce from heat and let it cool. Store it in an airtight container in the refrigerator for up to two weeks.
