Prepare the Filling

In a large bowl, combine ground chicken, sesame oil, minced baby ginger, chopped cilantro, chopped red chili, and yuzu soy sauce. Mix well until all ingredients are evenly incorporated.

Assemble the Potstickers

Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with a little water, fold the wrapper in half, and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers

In a large skillet, heat vegetable oil over medium-high heat. Arrange the potstickers in a single layer and cook until the bottoms are golden brown, about 3-4 minutes.

Steam the Potstickers

Add 1 cup of water to the skillet, cover with a lid, and reduce the heat. Allow the potstickers to steam for about 5-7 minutes, or until the water has evaporated and the potstickers are cooked through.

Serve

Remove the potstickers from the skillet and serve hot with additional yuzu soy sauce for dipping.
