Prepare the Roasted Tomatoes

Preheat your oven to 400°F (200°C). Cut the tomatoes in half, place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20 minutes or until they are soft and slightly caramelized.

Prepare the Shooter Mix

In a blender, combine the roasted tomatoes, tequila, lime juice, hot sauce, salt, and black pepper. Blend until smooth and well mixed. Taste and adjust seasoning as necessary.

Shuck the Oysters

Carefully shuck the oysters, keeping the liquor in the shell. Place each oyster in a shot glass or small serving dish, ensuring the shell is stable.

Assemble the Shooter

Pour the blended tomato and tequila mixture over each oyster in the shot glasses, filling them nearly to the top.

Garnish and Serve

Top each shooter with a sprinkle of chopped cilantro. Serve immediately with extra lime wedges and hot sauce on the side.
