Preparing the Vegetables
Preheat the oven to 400°F (200°C). Wash the tomatoes and cut them in half. Remove the seeds and core from the red bell pepper and cut it into strips.
Roasting the Vegetables
Place the halved tomatoes and bell pepper strips on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly charred.
Combining Ingredients
Once the vegetables are roasted, let them cool slightly. In a blender, combine the roasted tomatoes, bell pepper, caperberries, horseradish, Tabasco sauce, and vodka. Blend until smooth.
Adjusting Seasoning
Taste the mixture and adjust the seasoning with more salt, black pepper, or horseradish, as desired.
Serving
