Prepare the Gelatin

In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it sit for about 5 minutes until it blooms.

Heat the Cream

In a saucepan, combine the heavy cream, sugar, and salt. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.

Combine Gelatin

Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Add the vanilla extract and mix well.

Chill the Mixture

Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.

Prepare the Toppings

While the panna cotta is setting, prepare the toppings by dicing the summer melon and apricot. Mix with Tajin to taste.

Serve

Once the panna cotta is set, remove from the refrigerator, top with the melon and apricot mixture, and serve chilled.
