Trim and cube
Preheat smoker to 250°F (121°C). Trim the pork belly of any excessively thick skin or very large hard pieces of fat, leaving about an even layer of fat and meat. Cut the pork belly into roughly 1-inch to 1.5-inch cubes (about 1" cubes) so that each piece is a compact bite-sized cube. Aim for uniform pieces so they cook evenly.
Apply binder and rub
Place the pork belly cubes in a single layer in a tray. Toss the cubes with the yellow mustard until lightly and evenly coated — mustard acts as a binder and flavor base. In a bowl, combine kosher salt, coarse black pepper, smoked paprika, brown sugar, garlic powder, onion powder, and cayenne. Sprinkle the rub evenly over the mustard-coated cubes and toss gently until all sides are coated. Let rest 10–15 minutes while the smoker finishes preheating so the rub adheres.
Smoke until tender
Arrange the rubbed cubes in a single layer on a smoker rack or perforated tray, leaving small gaps for smoke circulation. Smoke at 250°F (121°C) for 1.5 to 2 hours, or until the cubes have a mahogany bark and an internal temperature of about 195°F (90°C). The goal is to render fat and develop bark but not collapse the cubes entirely.

Make the sauce
While the pork smokes, combine apple juice and apple cider vinegar in a small saucepan and bring to a simmer over medium heat. Add honey, the additional brown sugar, butter, barbecue sauce, Worcestershire sauce, and hot sauce. Stir until the butter melts and the sugar dissolves. Simmer gently for 5–7 minutes until slightly thickened. Taste and adjust: add more honey for sweetness, more vinegar for tang, or more hot sauce for heat. Remove from heat and stir in fresh thyme if using. Keep warm.
Toss and caramelize
When the pork belly cubes reach the target tenderness and color, transfer them to a foil pan (or an aluminum or ovenproof tray) leaving behind excess fat in the smoker if using. Pour about half of the warm sauce over the cubes and toss gently to coat. Cover the pan tightly with foil and return to the smoker (or conventional oven set to 300°F/150°C) for 30–45 minutes to render further and allow the sauce to penetrate and partially caramelize.
Finish in sauce
After the covered cook, remove the foil and add the remaining sauce. Stir gently to coat all pieces evenly. Increase the smoker or oven temperature to 325–350°F (163–177°C) and cook uncovered for another 10–20 minutes, stirring once or twice, until the sauce is sticky and the cubes have deep caramelized edges. Watch closely so the sugars don't burn.
Finishing & Serving
Rest and garnish
Transfer the finished burnt ends to a serving dish. Let rest 5 minutes so the glaze sets slightly. Sprinkle chopped chives or parsley over the top for color and freshness.
Serve
Serve the pork belly burnt ends hot as a plate course: alongside toasted sliced baguette, pickles, or slaw, or as a decadent appetizer. Provide extra warm sauce at the table for dipping.
