Method

Plating and Service Instructions

  1. 1

    Prepare components for service

Ensure the different dessert components (chocolate flourless cake slice, lemon tart slice, and seasonal fruit panna cotta) are chilled or at appropriate serving temperature. Chocolate cake should be at room temperature or slightly cool; lemon tart chilled; panna cotta set and chilled.

  2. 2

    Arrange base

Place the chosen dessert slice or panna cotta in the center or slightly off-center on a clean dessert plate. If serving multiple items on one plate, arrange them with visually pleasing spacing — for example, cake at 7 o’clock, tart at 3 o’clock, panna cotta at 11 o’clock.

  3. 3

    Apply sauces

Using a spoon or squeeze bottle, place a small pool (about 1–2 tablespoons / 15–30 ml) of fruit coulis on the plate near the dessert. Drizzle chocolate ganache sparingly across the cake or in a decorative arc on the plate. For panna cotta, spoon a thin ribbon of coulis over the top or around the base.

  4. 4

    Add whipped cream and textures

Pipe or spoon a quenelle or small dollop (about 2 tablespoons) of sweetened whipped cream next to the dessert items. Scatter toasted almond slivers around the plate for crunch, keeping them close to the cake or tart where they complement flavors.

  5. 5

    Garnish

Top with fresh mixed berries (about 2–3 berries per dessert component) and tuck 1–2 mint leaves near each item. Place edible flowers sparingly for color if desired. Ensure garnishes do not overwhelm the plate and are food-safe.

  6. 6

    Final quality check

Wipe any stray sauce or crumbs from the rim of the plate with a clean towel. Confirm temperatures and portion sizes. Serve immediately with dessert fork and spoon.
