Gumbo Base / Roux & Mirepoix

    Make a dark roux

    In a heavy-bottomed Dutch oven or large pot over medium-low heat, melt the butter with the vegetable oil. Add the flour and stir constantly with a wooden spoon or whisk. Cook the roux slowly, maintaining a gentle simmer and stirring continuously to prevent burning. After about 20–30 minutes the roux should turn a deep peanut-butter-to-chocolate color and smell nutty. Reduce heat if it starts to smoke.

    Add the diced onion, bell pepper, and celery (the Cajun 'holy trinity') to the roux. Cook, stirring frequently, until the vegetables are softened and translucent, about 6–8 minutes. Add the minced garlic and cook another 30–45 seconds until fragrant.

Liquid, Stock & Seasoning

    Gradually whisk in 1 cup of the seafood stock to the roux-vegetable mixture to deglaze and loosen any browned bits, then slowly stir in the remaining 5 cups of stock until smooth. Bring the mixture to a gentle simmer.

    Stir in the tomato paste, Worcestershire sauce, hot sauce (if using), bay leaves, thyme, smoked paprika, cayenne, salt, and black pepper. Taste and adjust seasoning carefully — the flavors will concentrate as the gumbo reduces.

    Reduce heat to low, cover partially, and simmer the gumbo for 30 minutes to allow flavors to meld and the roux to fully integrate. Stir occasionally to prevent sticking. If you prefer a thinner gumbo, add up to 1 cup more stock or water.

Seafood & Vegetables

    If using andouille sausage, brown the slices in a separate skillet over medium-high heat for 2–3 minutes per side until browned, then add them to the gumbo pot.

    Add the sliced okra to the simmering gumbo and cook 8–10 minutes until the okra is tender and has helped thicken the stew slightly. If using frozen okra, add it straight from frozen and extend the cook time by 2–3 minutes.

    Increase heat to medium and add the shrimp. Cook until shrimp are opaque and just cooked through, about 3–4 minutes depending on size. Stir gently to avoid breaking the shrimp.

    Lower heat to maintain a gentle simmer and fold in the lump crab meat carefully to preserve lumps. Cook 2–3 minutes more just to warm the crab through; do not overcook or the crab will become stringy.

    Remove and discard bay leaves. Stir in sliced green onions and chopped parsley, reserving a small amount for garnish.

To Serve

    Spoon hot cooked white rice into shallow bowls (about 1 cup cooked rice per serving). Ladle the gumbo generously over the rice so each bowl gets a mix of broth, shrimp, crab, okra, and sausage if used.

    Offer file powder at the table for guests to sprinkle (1/4–1/2 tsp per bowl) and serve with lemon wedges. Garnish each bowl with remaining green onions and parsley. Adjust salt and hot sauce at the table.
