    Make a dark roux

    In a heavy-bottomed Dutch oven or large pot set over medium heat, add 1/2 cup vegetable oil. Once hot, whisk in 1/2 cup all-purpose flour steadily. Cook, stirring constantly with a wooden spoon or heatproof spatula, until the roux turns a deep peanut-butter to milk-chocolate brown (about 20–30 minutes). Reduce heat as needed to prevent burning; patience is critical — this develops the gumbo's flavor.

    Sweat the holy trinity

    When the roux is the desired color, carefully add the diced onion (1 cup), diced green bell pepper (1/2 cup), and diced celery (1/2 cup). The roux will sputter; stir constantly and cook 6–8 minutes until the vegetables soften and become translucent. Add the minced garlic (3 tsp) and cook 30–60 seconds until fragrant.

    Brown the sausage

    Push the vegetables to the side of the pot or temporarily remove half the mixture to a bowl. Add the sliced andouille sausage (12 oz) and sear 3–4 minutes until browned and slightly crisp on the edges. Stir back into the vegetable+roux mixture.

    Deglaze and build the stock

    Stir in the tomato paste (2 tbsp) and cook 1 minute. Slowly pour in the chicken stock (6 cups) while stirring to fully incorporate the roux into the liquid. Add Worcestershire sauce (1 tsp), hot sauce (1 tsp), dried thyme (1 tsp), smoked paprika (1 tsp), cayenne (1/4 tsp), bay leaves (2 pieces), salt (1 tsp) and black pepper (1/2 tsp). Bring the pot to a gentle simmer.

    Simmer with okra

    Add the sliced okra (2 cups) to the simmering gumbo. Reduce heat to low and simmer uncovered for 25–30 minutes to meld flavors and allow the gumbo to thicken slightly. Stir occasionally and skim any foam or excess fat if needed.

Greens & Seafood Finish

    Add the greens

    Stir in the sliced collard greens (6 cups) in batches, allowing them to wilt into the gumbo. Continue simmering gently for 8–10 minutes until the greens are tender but still bright. If the gumbo becomes too thick, add up to 1/2 cup additional stock or water to reach desired consistency.

    Cook the shrimp

    Add the peeled and deveined shrimp (1 lb) to the pot and stir. Simmer for 3–5 minutes, until the shrimp turn pink and are just cooked through. Avoid overcooking — shrimp should be firm and opaque.

    Finish the gumbo

    Remove the pot from heat. Stir in chopped fresh parsley (1/4 cup), sliced green onions (1/2 cup), and lemon juice (1 tbsp). Taste and adjust seasoning with additional salt, black pepper, or hot sauce as needed. Remove and discard bay leaves.

To Serve

    Ladle the gumbo over cooked white rice (about 1/2 cup rice per serving or 4 cups total). Serve each portion with a cornbread wedge on the side. Garnish with extra sliced green onions or chopped parsley if desired.
