Method
Cocktail Base
Measure and Combine
Add bourbon, fresh lemon juice, fresh lime juice, simple syrup, and orange liqueur (if using) to a cocktail shaker.
Dry Shake
Add the egg white (or 1 oz aquafaba) to the shaker. Do a vigorous dry shake (no ice) for 15–25 seconds to create initial emulsion and start foam development.
Wet Shake
Add small ice to the shaker and shake vigorously for 10–15 seconds until the shaker is icy cold to the touch. This chills and dilutes the mixture and further aerates the foam.
Double Strain
Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer to remove ice shards and any coagulated bits of egg.
Foam & Finishing
Set the Foam
Allow the foam to rise and settle for 10–20 seconds so it forms a stable cap on the cocktail.
Bitters Art
Add 3 dashes of Angostura bitters to the foam in a small cluster. Using a toothpick or bartender’s pen, drag through the drops to create a simple decorative pattern and gently incorporate a touch of spice aroma into the foam.
Cinnamon Dust
Lightly dust a small pinch of ground cinnamon over the foam, concentrating near the bitters pattern for aroma contrast. Be careful — a little goes a long way.
Garnish
Express an orange zest over the glass to release oils, then wipe the rim with the twist and drop it onto the foam as a garnish.
Service Notes
Serve immediately to enjoy the contrast of chilled spirit, bright citrus, and silky foam with subtle spice. If using aquafaba, note foam will be slightly different in mouthfeel but still stable. If you prefer no raw egg, substitute aquafaba (1 oz) and add an extra dry shake for stability.
