Cocktail

2 oz gin (preferably London dry)3/4 oz Fresh lime juice1/2 oz simple syrup (1:1)2 1/2 oz Club soda2 dashes Angostura bitters1 cup ice (for shaking and serving)1 to taste lime wheel or wedge (garnish)1 to taste fresh mint sprig (optional garnish)

Method

Cocktail

Prepare glass

Chill a highball or Collins glass by filling it with ice water while you prepare the drink, or place it in the freezer for a few minutes. When ready, discard the ice water.

Combine ingredients

In a cocktail shaker, add 2 oz gin, 0.75 oz fresh lime juice, 0.5 oz simple syrup, and 2 dashes Angostura bitters. Fill the shaker about two-thirds with ice.

Shake

Shake vigorously for 10–12 seconds until the shaker is cold and well chilled. This both chills and slightly dilutes the mix for balance.

Strain and top

Discard the ice from the chilled glass, fill the glass with fresh ice, then double-strain the shaken contents into the glass. Top with approximately 2.5 oz club soda (adjust to taste) and gently stir once or twice to integrate without losing effervescence.

Garnish and serve

Express a lime wheel or wedge over the drink to release oils and drop it in as garnish. Optionally slap a mint sprig between your palms to release aroma and add it as a garnish. Serve immediately with a stirrer or straw.
