Garnish — Frosted Cranberries
Prepare cranberries
Rinse and dry the fresh cranberries thoroughly. Place the granulated sugar in a shallow dish. If using egg white or aquafaba, lightly whisk it until slightly frothy in a separate small bowl.
Lightly brush each cranberry with the egg white or aquafaba (about 1 teaspoon will coat 6 cranberries). Roll each cranberry in the granulated sugar until well coated. Transfer to a parchment-lined tray and allow to dry at room temperature for 15–20 minutes while you prepare the cocktail.
Cocktail — Build & Serve
Add 2 oz Gray Whale gin, 0.75 oz Disaronno, 0.75 oz lime-pear & ginger syrup, 0.25 oz fresh lime juice, and 2 dashes cranberry bitters into a cocktail shaker.
Fill the shaker with ice (about 1 cup). Seal and shake vigorously for 12–15 seconds until the outside of the shaker becomes very cold and slightly frosty.
Double-strain (if you prefer a cleaner texture) into a chilled coupe or Nick & Nora glass. You may also strain over a single large ice cube in a rocks glass if you prefer it slightly diluted.
Garnish with 3 frosted cranberries skewered on a cocktail pick or floating on top of the drink. Serve immediately.
