Lavender Simple Syrup
Make syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer.
Add 2 tablespoons dried culinary lavender and 1 teaspoon lemon zest to the simmering syrup. Reduce heat to low and simmer gently for 3–4 minutes to infuse; do not boil vigorously or burn the lavender.
Remove the saucepan from heat and allow the lavender to steep in the syrup for 15 minutes, covered. Taste after 10 minutes; if flavor is very strong, steep less time next batch.
Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing lightly on the solids to extract flavor but not grit. Discard solids. Cool to room temperature, then refrigerate until chilled. Syrup keeps 10–14 days refrigerated.
Cocktail
Dry shake (if using egg white)
If using egg white for a frothy top, add 2 oz gin (or vodka), 3/4 oz fresh lemon juice, 3/4 oz chilled lavender simple syrup, 1/2 oz elderflower liqueur (optional), and 1/2 egg white to a cocktail shaker without ice. Dry-shake vigorously for 15–20 seconds to emulsify and build foam.
Wet shake
Add ice to the shaker (enough to fill about two-thirds). Shake vigorously for 10–15 seconds to chill and slightly dilute the drink. If you skipped egg white, combine all liquid ingredients with ice and shake 10–15 seconds.
Strain the cocktail into the chilled coupe or martini glass using a fine strainer to remove ice shards and any lavender sediment.
Top gently with about 1 oz club soda for a light effervescence if desired. This brightens the drink and lifts the floral aroma.
Serve immediately. Sip slowly to appreciate the layered floral notes. Makes 1 cocktail.
