Make syrup

Combine 0.5 cup dark brown sugar and 0.5 cup water in a small saucepan over medium heat. Stir until sugar fully dissolves and mixture comes just to a simmer. Remove from heat and let cool to room temperature. Transfer to a sealed container and refrigerate; syrup will keep 2 weeks. Use 0.5 oz per cocktail.

Prepare glass

Chill an old-fashioned / rocks glass by filling it with ice water while you prepare the cocktail. If using a large single ice cube or sphere, set it aside to place in the glass after mixing.

Combine ingredients

Add 2 oz Spicebox Whiskey, 0.5 oz brown sugar syrup, 1 oz chilled apple cider, 0.25 oz fresh lemon juice, and 3 dashes toasted almond bitters into a mixing glass filled with plenty of ice.

Stir

Stir the mixture for 20–30 seconds (about 30–40 revolutions) until well chilled, slightly diluted, and the outside of the mixing glass is frosted. This ensures proper temperature and integration of the cider and syrup with the whiskey.

Prepare serving glass

Dump the ice water from the chilled rocks glass and place a large ice cube or sphere in the glass.

Strain

Fine-strain the stirred cocktail into the prepared rocks glass over the large ice cube to remove any small ice shards and ensure a clean presentation.

Garnish / Torched Orange Rind

Prep orange rind

Cut a 1½" x 1½" piece of orange peel, removing as much of the pith as possible while retaining a good amount of zest. Lightly rub the rind over the edge of the glass to release citrus oils.

Wet and sugar the rind

Brush or drop ~0.25 oz apple cider on the outside (zested) face of the orange peel to help the sugar adhere. Sprinkle ~1 tsp brown sugar evenly over the zested side; shake off any excess so the sugar layer is thin and uniform.

Torch the rind

Hold the sugared side of the orange peel about 2–3 inches from the drink and use a culinary torch to carefully caramelize the sugar and lightly char the zest. Move the torch continuously to avoid burning; you want a crisped, aromatic surface with some caramelization and a touch of smoke. If you don't have a torch, you can char briefly over a gas flame or use a very hot skillet, but be careful.

Finish and express oils

After torching, quickly hold the rind over the glass, zested side down, and give it a firm squeeze to express the hot oils onto the drink, then drop the rind into the cocktail as a garnish. The torched sugar and expressed oils add caramelized orange aroma and a hint of char that complements the spiced whiskey and cider.
