    Bring water to a simmer

    Pour 1 liter of water into a kettle or medium saucepan and bring to a gentle simmer (about 90–95°C / just before rolling boil).

    Combine teas

    If using a combined caffeinated and caffeine-free blend, place 4 tsp black tea and 2 tsp rooibos into a heatproof teapot or infuser.

Festive Spice Blend

    Toast whole spices (optional)

    In a dry skillet over medium heat, toast the cinnamon sticks, star anise, cloves, and crushed cardamom pods for 30–45 seconds until fragrant. This step intensifies aroma but can be skipped.

    Simmer spices and citrus

    Add the toasted (or untoasted) spices, sliced ginger, and orange peel to the simmering water. Reduce heat to low and simmer gently for 5 minutes to infuse the water with spice and citrus oils.

    Steep tea with spices

    Pour the hot spiced water over the tea leaves in the teapot or place the tea leaves and spices directly into the saucepan. Cover and steep for 4–6 minutes depending on desired strength (4 minutes for lighter, 6 minutes for robust).

Sweetening & Citrus

    Strain and sweeten

    Strain the tea into a serving pot or individual cups to remove tea leaves and whole spices. Stir in 3 tsp honey or maple syrup and 1 tsp brown sugar (if using) while the tea is hot so the sweeteners dissolve completely.

    Adjust acidity

    Add 2 tsp fresh lemon juice and taste. Adjust sweetness or lemon to balance — add up to 1 more tsp honey or a squeeze more lemon if desired.

    Add orange

    Float or add 1 orange slice per cup for a bright citrus accent and gentle aroma.

Creamy Option & Garnish

    Prepare milk (optional)

    If you prefer a creamy tea, gently warm or steam 1 cup milk (or dairy-free milk) until hot but not boiling. Stir in 1 tsp vanilla extract if using. Froth lightly if desired and pour about 2–3 tbsp milk per cup into the brewed tea.

    Garnish and serve

    Ladle tea into warmed cups. Garnish each cup with a sprig of rosemary and 2 whole cranberries and an orange slice. For a festive touch, place a cinnamon stick in each cup as a stirrer.

    Storage and reheating

    Leftover spiced tea can be refrigerated in a sealed container for up to 48 hours. Reheat gently on the stove until steaming; if concentrated, add a splash of water or fresh orange juice to brighten before serving.
