Prepare the Vegetables

Peel and chop the carrots, potatoes, and onions into bite-sized pieces. Mince the garlic cloves.

Season the Meat

Rub the beef chuck roast with salt, black pepper, thyme, and rosemary. Let it sit for 15 minutes to absorb the flavors.

Cooking

Sear the Meat

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Once hot, sear the beef chuck roast on all sides until browned (about 4-5 minutes per side). Remove and set aside.

Sauté the Vegetables

In the same pot, add the chopped onions and minced garlic. Sauté until the onions are translucent (about 3-4 minutes).

Combine Ingredients

Add the carrots and potatoes to the pot, stirring well. Return the seared beef to the pot.

Add Liquids

Pour in the beef broth and red wine. Add bay leaves. Bring to a boil, then reduce to a simmer.

Cook the Roast

Cover the pot and let it simmer on low heat for about 3-4 hours or until the beef is tender and easily shreds with a fork.

Serve

Remove from heat, discard bay leaves, and let the dish rest for 10 minutes. Serve the beef and vegetables in bowls, spooning the broth over the top.
