Preparation
Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub salt and pepper all over the pork belly.
Sear the Pork Belly
In a large oven-safe pan, heat the olive oil over medium-high heat. Add the pork belly, skin side down, and sear for about 5-7 minutes until the skin is golden brown. Flip and sear the other side for another 5 minutes.
Cooking
Make the Glaze
In a bowl, whisk together soy sauce, bourbon, brown sugar, garlic, and ginger until well combined.
Braise
Pour the glaze over the pork belly in the pan. Cover the pan with a lid or aluminum foil and place it in the preheated oven. Braise for 2.5 to 3 hours, until the pork is tender.
Rest and Slice
Remove the pork belly from the oven and let it rest for 15 minutes before slicing it into pieces.
Serving
Plate the Dish
Serve the sliced pork belly topped with chopped peanuts, kimchi, and sprinkle with chopped green onions.
