Prepare the Chicken

Preheat the oven to 375°F (190°C). Season the quarter chicken pieces with olive oil, salt, and black pepper. Place them in a baking dish.

Cook the Black Rice

Rinse the black rice under cold water. In a pot, combine the black rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-40 minutes until tender.

Make the Orange Glaze

In a small saucepan, combine the orange juice, honey, soy sauce, minced garlic, and grated ginger. Bring to a simmer over medium heat and cook for about 5-7 minutes until slightly thickened.

Bake the Chicken

Pour half of the orange glaze over the chicken pieces. Bake in the preheated oven for about 25-30 minutes, basting with the remaining glaze halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Prepare the Succotash

While the chicken is baking, heat a skillet over medium heat. Add the succotash and season with salt and pepper. Cook for about 5-7 minutes until heated through.

Serve

Plate the black rice, succotash, and quarter chicken. Drizzle any leftover orange glaze over the top before serving.
