Prepare Simple Syrup (if you don't have pre-made)

Make simple syrup

Combine 2 tablespoons water and 2 tablespoons granulated sugar (to make approximately 2 tablespoons syrup) in a small saucepan. Warm over low heat, stirring until sugar dissolves. Remove from heat and cool to room temperature before using. (If you already have 1:1 simple syrup, use 1 tablespoon.)

Fill a tall glass with ice cubes (about 1 cup).

Add the lemon juice (1 tablespoon), lime juice (1 tablespoon), and 1 tablespoon cooled simple syrup to the glass.

Gently pour 4 cups (about one standard 1‑liter bottle equivalent) of chilled sparkling water over the citrus and syrup. Pour slowly to preserve carbonation.

Lightly stir once with a long spoon to combine — do not over-stir to avoid flattening the soda.

If using, add the lemon and lime zests (1 teaspoon each) for extra brightness by grating them over the drink or dropping them in. Stir very gently to release aroma.

Garnish with a lemon or lime wheel and an optional mint sprig. Serve immediately while very cold and fizzy.
