Make simple syrup
Combine the cold filtered water (1 cup) and granulated sugar (1 cup) in a small saucepan. Heat over medium, stirring constantly until the sugar fully dissolves and the mixture is just beginning to simmer. Remove from heat and let cool to room temperature. This yields a clear simple syrup that mixes easily into cold soda.
Prepare flavored syrup
In a blender or small saucepan, combine the cooled simple syrup with the remaining 3 cups cold water, fresh lemon juice, fresh lime juice, and vanilla extract. If using a fruit or ginger variation (see optional section), add chosen fruit, ginger slices, or mint now. Blend on medium until fruit is broken down (if using fruit) or bruise mint leaves gently against the side of the blender to release oils. If you used fresh ginger, simmer the mixture for 4–5 minutes to extract flavor, then cool.
Strain and chill
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a pitcher to remove solids. Press solids gently to extract syrup. Taste the flavored syrup: it should be noticeably sweet and slightly bright from lemon/lime. If it's too concentrated, add a tablespoon or two of water; if too weak, add up to 2 tablespoons more simple syrup. Refrigerate the flavored syrup until cold (at least 20 minutes).
Carbonate
When ready to serve, gently stir the chilled flavored syrup to homogenize. In each serving glass (8–10 ounce), add 2–3 tablespoons of the flavored syrup (about 30–45 ml). Add ice if desired, then slowly pour 1 cup (240 ml) chilled club soda over the syrup to preserve carbonation. Stir gently once with a bar spoon to combine.
Flavoring Variations (optional)
Strawberry or raspberry soda: For berry versions use the 1 cup fresh berries. After blending with the syrup, strain to remove seeds for a smooth soda. Use 2–3 tablespoons of strained berry syrup per 8 oz glass.
Mint soda: Lightly muddle mint leaves with 1–2 tablespoons of the flavored syrup in a glass before adding ice and club soda. This releases aromatic oils without shredding leaves into the drink.
Ginger soda: Use sliced fresh ginger in the syrup step and simmer briefly. This produces a spicy ginger soda; adjust intensity by adding more or less ginger. Strain out the ginger before serving.
Coffee soda: For a coffee-flavored soda, skip the lemon/lime and add 2 tablespoons concentrated coffee to the chilled simple syrup mixture. Add chilled club soda as above for a fizzy coffee refresher.
