Prepare and brine

Rinse drumsticks and pat dry with paper towels. Using a sharp knife lightly score the skin in 2–3 places per drumstick to help marinade penetrate.

In a large nonreactive container or two large resealable bags, whisk together buttermilk, eggs, 1 cup hot honey, 3 tablespoons salt, 2 teaspoons black pepper, smoked paprika, and garlic powder until smooth.

Add drumsticks to the marinade, ensuring each piece is well coated. Press out excess air and seal (or cover container). Refrigerate for at least 4 hours and up to overnight (8–12 hours gives best flavor).

Breading

About 30–45 minutes before frying, set three stations: the marinated drumsticks (left), a shallow tray for wet drips, and the dry breading (right). In a very large shallow pan or baking sheet, whisk together flour, cornstarch, 2 tablespoons salt, 2 teaspoons black pepper, cayenne, onion powder, and dried oregano until uniform.

Remove drumsticks from refrigerator. Working in batches of 5–8 pieces, lift each drumstick from the marinade allowing excess to drip back into the bowl. Dredge thoroughly in the seasoned flour mixture, pressing the flour onto the skin to create an even coating. Set coated drumsticks on a wire rack set over a baking sheet and let rest 10–15 minutes to set the crust.

For extra crunch (optional): double-dip by returning rested drumsticks briefly to the marinade, then back into the flour mixture, pressing again to adhere.

Frying & Finish

Fill a deep heavy pot or Dutch oven with oil to a depth of about 3–4 inches (approximately 2–2.5 liters for a large pot). Attach a deep-fry thermometer and heat oil to 325°F (165°C) for the initial fry.

Working in batches (do not overcrowd — 6–8 pieces depending on pot size), gently lower drumsticks into the oil. Maintain oil temperature around 325°F (165°C). Fry for 8–10 minutes until the crust is set but not overly browned. Transfer to a wire rack set over a baking sheet to drain.

Increase oil temperature to 350–360°F (175–180°C). When oil stabilizes, return drumsticks in batches and fry a second time for 4–6 minutes until golden brown and internal temperature reaches 175–180°F (79–82°C) at the thickest part of the drumstick (avoid touching bone). Transfer back to rack to drain and rest 5 minutes.

While the final batches fry, prepare the honey finish: in a medium saucepan over low heat combine 1 cup honey, 4 tablespoons butter, 2 tablespoons apple cider vinegar, and 2 tablespoons hot sauce (if using). Warm gently, stirring until butter melts and mixture is glossy and slightly runny, about 2–3 minutes. Taste and adjust: add a pinch of salt or a teaspoon of hot sauce if you want more heat. Keep warm on lowest heat setting or transfer to a heatproof bowl.

When all drumsticks are fried and resting, transfer them in small groups to the honey glaze and either brush the glaze thoroughly on each piece or toss quickly in a shallow pan with the glaze to coat evenly — avoid soaking long to preserve crispness. Place glazed drumsticks back on the rack and sprinkle with finely chopped parsley for color.

Optional finishing: drizzle additional warmed hot honey over the plated drumsticks for extra shine and sweetness just before serving.
