Method
Buttermilk Marinade
In a large bowl whisk together 4 cups buttermilk, 2 eggs, 2 tablespoons hot sauce, 2 tsp kosher salt, 1 tsp black pepper, and 1 tsp granulated garlic until smooth.
Trim excess skin fat from the chicken pieces if desired. Pat the 8 pieces dry with paper towel just to remove surface moisture; do not fully dry. Season the chicken lightly with the 2 tsp salt and 1 tsp black pepper, then submerge the pieces in the buttermilk mixture ensuring they are fully coated.
Cover the bowl and refrigerate at least 6 hours, ideally overnight (8–12 hours) for maximum tenderness and flavor.
Seasoned Flour Dredge
About 30 minutes before frying, prepare the dredge. In a large shallow container combine 4 cups all-purpose flour, 1 tablespoon cornstarch, 2 tsp paprika, 1 tsp smoked paprika, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, 1 tsp cayenne, 2 tsp kosher salt, and 1 tsp black pepper. Whisk thoroughly to distribute spices evenly.
Make a double-dredge station: place the seasoned flour in one shallow pan. In a second shallow pan whisk together 1 cup of the reserved marinade (if any) with 1 egg; if no reserved marinade, beat one extra egg with 1/4 cup buttermilk—this helps the flour adhere.
Remove chicken from refrigerator. One piece at a time, shake off excess marinade, dip briefly into the egg-buttermilk mix, then press and coat thoroughly on all sides in the seasoned flour. Shake off excess flour, then set the pieces on a wire rack and let rest 10–15 minutes to allow the crust to tack up (this reduces flour shedding in the oil).
Frying
Pour neutral oil into a deep heavy pot or Dutch oven to a depth of about 2–3 inches (roughly 1.5–2.0 L used here). Attach a thermometer and heat the oil to 325°F (163°C) for the initial cook.
Working in batches (do not overcrowd), gently lower chicken pieces into the oil, skin-side down first. Maintain oil temperature between 300–325°F (149–163°C). Fry the pieces for 12–15 minutes depending on size, turning once halfway, until the crust is deep golden and internal temperature reaches 165°F (74°C) in the thickest part (use an instant-read thermometer).
Remove the chicken to a wire rack set over a sheet pan to drain and rest for 5 minutes. If pieces are not fully golden, you can increase oil to 350°F (177°C) for the last 1–2 minutes to crisp the exterior, watching closely to avoid burning.
Honey Finish
While the chicken rests, make the honey glaze: in a small saucepan over low heat combine 1 cup mild honey, 4 tablespoons unsalted butter, 1 tablespoon apple cider vinegar, 1 teaspoon chili flakes, and 1 tablespoon lemon juice. Warm gently, stirring, until butter melts and glaze is smooth and slightly thinned (do not boil aggressively). Taste and adjust: add a pinch of salt if needed, or more vinegar for tang.
Place fried chicken on a clean tray. Using a spoon or silicone brush, lightly drizzle or brush a thin, even coating of the warm honey glaze over each piece. The goal is a glossy, lightly-sweet finish—avoid heavy pooling which will make the crust soggy. For a slightly stickier finish, toss a few pieces briefly in a large bowl with 2–3 tablespoons glaze, then return to the rack.
If you prefer a fully sticky finish, return glazed pieces to a 375°F (190°C) oven for 3–4 minutes to set the coating, then remove and rest 2 minutes before serving.
To Serve
Transfer Ron's Honey Fried Chicken to a platter. Garnish with 2 tablespoons chopped fresh parsley and serve with lemon wedges on the side for squeezing over the chicken.
