Whisk eggs

Crack the 2 large eggs into a small bowl. Add 2 tablespoons milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until combined and slightly frothy.

Cook eggs with protein

Heat a nonstick skillet over medium heat and add 1 teaspoon butter or oil. Add the diced cooked sausage or ham (2 oz) and warm for 30–60 seconds. Pour the egg mixture into the skillet. Let eggs set for 20–30 seconds, then gently stir with a spatula, folding scrambled eggs until they are softly set but not dry (about 1–2 minutes). When eggs are nearly done, stir in 1/4 cup shredded cheddar cheese so it melts into the eggs. Remove pan from heat.

Sauté peppers and scallion

Before or while cooking the eggs, add the thinly sliced scallion (1) and 2 tablespoons diced red bell pepper to the skillet with the warm protein for 30–45 seconds so they soften slightly but keep brightness. If you prefer, sauté these for 1–2 minutes until softened. Add the chopped baby spinach (1/4 cup) in the last 15–20 seconds to wilt it into the mixture.

Combine vegetables with eggs

Fold the softened vegetables into the scrambled eggs so the mixture is uniform. Taste and adjust seasoning with a small pinch of salt or pepper if needed.

Prep tortilla

Warm the flour tortilla for 10–15 seconds on the stovetop or in the microwave to make it pliable. Spread 1 tablespoon cream cheese down the center of the warm tortilla, leaving space at each end for folding. If using hot sauce or salsa, drizzle 1 teaspoon over the cream cheese now.

Assemble wrap

Spoon the egg, protein, and vegetable mixture onto the center of the tortilla over the cream cheese in an even line, leaving about 1–2 inches at each edge.

Fold and finish

Fold the bottom edge of the tortilla up over the filling, fold both sides in, then roll tightly to form a burrito-style wrap. Optional: place seam-side down in a clean skillet over medium-low heat and toast 1 minute per side (about 2–3 minutes total) until the outside is lightly golden and the seam seals.

Slice the wrap in half if desired and serve immediately with additional hot sauce or salsa on the side.
