Prepare dry ingredients

In a large mixing bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda and fine salt until evenly combined.

Mix wet ingredients

In a separate bowl or large measuring cup whisk the buttermilk, whole milk, eggs, melted butter and vanilla extract until smooth and slightly frothy.

Make the batter: Pour the wet ingredients into the dry ingredients and gently fold with a rubber spatula or wooden spoon until just combined. A few small lumps are fine — avoid overmixing to keep pancakes tender. Let the batter rest 5–10 minutes; this hydrates the flour and helps leavening.

Adjust consistency if needed: If batter looks very thick, stir in up to 1–2 tablespoons additional milk to reach a thick but pourable consistency (should flow slowly from a ladle).

Cook Pancakes

Preheat and grease: Place a large nonstick skillet or griddle over medium heat and let it preheat 5 minutes. Lightly grease with the optional butter or a small drizzle of neutral oil and wipe with a folded paper towel to leave a thin, even film.

Test temperature: Drop a teaspoon of batter onto the griddle — it should sizzle gently and spread slowly. If it browns too quickly lower the heat slightly.

Cook pancakes: For each grande pancake, ladle about 1/2 cup of batter onto the hot griddle, spacing three pancakes comfortably (you will make three per serving). Cook until bubbles form across the surface and edges look set, about 2–3 minutes.

Flip and finish: Using a thin spatula, flip the pancakes and cook the second side until golden brown and cooked through, another 1.5–2 minutes. Transfer to a warm plate and tent with foil while you cook the remaining pancakes. Keep heat moderate so pancakes brown evenly without burning.

Whipped Butter

Make whipped butter: In a small bowl or the bowl of a stand mixer fitted with the paddle, beat the softened unsalted butter on medium speed until smooth. Add powdered sugar, salt and vanilla and continue beating until light and fluffy, 1–2 minutes. If the mixture is too stiff, add the optional heavy cream teaspoon by teaspoon until spreadable but still whipped.

Taste and adjust: Taste for sweetness and salt; add a pinch more salt or 1/2 teaspoon powdered sugar if desired.

To Serve

Plate: Stack three pancakes per serving on warm plates. Top each stack with a generous dollop (about 1 tablespoon) of whipped butter so it slowly melts over the hot cakes.

Finish: Drizzle pure maple syrup over the pancakes and garnish with fresh berries or mint if using. Serve immediately.
