Toss the dried potato sticks with 1 tablespoon cornstarch, 1 teaspoon salt and 1/2 teaspoon black pepper until evenly coated. This helps create a crisp exterior.

Increase oil temperature to 375°F (190°C). Fry the par-cooked potatoes again in batches for 2–3 minutes until golden and crispy. Drain on paper towels and keep warm in a single layer in a low oven (around 200°F / 95°C) while you finish the chili.

Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the diced onion and cook 3–4 minutes until softened and translucent.

Add the minced garlic and cook 30 seconds until fragrant.

Add the ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 5–6 minutes. Drain any excess fat if needed.

Stir in 1 tablespoon tomato paste and cook 1 minute. Add 240 ml tomato sauce and 120 ml beef broth, then sprinkle in 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon brown sugar, 3/4 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine.

Bring the mixture to a gentle simmer, reduce heat to low, and cook uncovered for 10–12 minutes to thicken slightly, stirring occasionally. Taste and adjust seasoning (add a pinch more salt or chili powder if desired). Keep warm.

Preheat broiler (or oven to 425°F / 220°C). Arrange a single layer of fries on an ovenproof platter or baking sheet.

Spoon the hot chili evenly over the fries, distributing the meat in a way that covers most fries but still leaves some visible edges for crispness.

Sprinkle 1 1/2 cups shredded cheddar cheese evenly over the chili-covered fries.
