    If using oven-baked fries: preheat oven and follow package instructions for a crisp large-size fry (usually 425°F / 220°C, 20–25 minutes). If frying: heat vegetable oil in a heavy pot or deep fryer to 350°F (175°C).

    For frying: working in batches if needed, add fries in a single layer and fry until golden and crisp, about 4–6 minutes per batch depending on size. Use a slotted spoon to transfer fries to a paper towel–lined tray. Immediately season with 1 tsp salt and keep warm in a low oven (200–225°F / 95–110°C) while you make the gravy.

Smothering gravy

    Make a roux

    In a medium saucepan over medium heat, melt 2 tbs unsalted butter until foaming. Whisk in 2 tbs all-purpose flour and cook, whisking constantly, for 1.5–2 minutes until the mixture is a light golden roux and the raw flour smell is gone.

    Add stock and seasonings

    Gradually whisk in 2 cups beef stock, a few tablespoons at a time, smoothing lumps before adding more. Bring mixture to a gentle simmer while whisking to keep it smooth.

    Finish and adjust

    Stir in 1 tsp Worcestershire sauce, 1 tsp soy sauce, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp freshly ground black pepper and 1/2 tsp salt. Continue to simmer gently, whisking occasionally, until the gravy thickens to a pourable but coating consistency, about 3–5 minutes. Taste and adjust seasoning (more salt or pepper if desired). If gravy becomes too thick, whisk in up to 2–4 tbs more stock or water to reach desired consistency.

Assembly and toppings

    Place hot fries on a large serving tray or individual plates.

    Evenly pour the hot gravy over the fries so they are 'smothered'—use all or as much as you prefer. The gravy should coat and slightly soak into the fries but leave some crisp texture beneath.

    Optional: Immediately scatter 3/4 cup shredded cheddar cheese over the hot gravy so it melts, then sprinkle 2 tbs sliced green onions and 1/4 cup crisp bacon bits on top. Serve immediately.
