    Prepare jalapeños

    Wear gloves if preferred. Cut stems off jalapeños, halve lengthwise, remove seeds and white ribs for milder heat, then finely dice to yield roughly 3 pieces worth. Pat diced jalapeño lightly with paper towel to remove excess moisture.

    Mix cheeses and aromatics

    In a medium mixing bowl, beat together the softened cream cheese until smooth. Fold in the shredded sharp cheddar, diced jalapeños, chopped green onions, garlic powder, smoked paprika, 1 tsp salt, and 1/2 tsp black pepper. Mix thoroughly until evenly combined. Taste a small amount and adjust salt if needed.

    Portion and chill

    Using a 1-tablespoon scoop or small spoon, portion the mixture into roughly 1-inch rounds and place them on a parchment-lined baking sheet. You should get about 30–36 bites depending on size. Freeze the bites on the sheet for 20–30 minutes until firm; this helps them hold shape during breading and frying.

    Set up dredging stations

    Place the flour and cornstarch in a shallow bowl or plate and mix together. In a second shallow bowl, whisk the 2 beaten eggs with 2 tablespoons cold water to make an egg wash. In a third bowl, combine the panko breadcrumbs and optional fine dry breadcrumbs, then season with 1/2 tsp salt and 1/4 tsp black pepper and mix.

    Coat bites

    Working with chilled bites, dredge each piece first in the flour mixture, shaking off excess; then dip into the egg wash, allowing excess to drip back into the bowl; finally press into the panko mixture to fully coat. For an extra-crisp coating, repeat the egg wash and panko step once more for a double coat. Place coated bites on a separate parchment-lined tray and return to the refrigerator for 10 minutes to firm up.

Frying

    Heat oil

    Pour oil into a deep heavy-bottomed pot or Dutch oven to a depth of about 2 inches (about 1.5 cups depending on pot). Heat over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle and brown in about 30–45 seconds.

    Fry bites

    Fry the coated jalapeño cheddar bites in small batches (4–6 at a time depending on pot size) for 2.5–3.5 minutes, turning occasionally, until golden brown and crisp. Do not overcrowd the pot or temperature will drop. Maintain oil temperature around 340–350°F for even cooking.

    Drain and rest

    Use a slotted spoon to transfer fried bites to a wire rack set over a baking sheet or to paper towels to drain briefly. Let rest 2–3 minutes so the cheese interior sets slightly. If making multiple batches, keep finished bites in a warm oven at 200°F (95°C) for up to 20 minutes to serve all hot.

    Serve the jalapeño cheddar bites hot with ranch dressing or cilantro-lime crema and lime wedges on the side. Note: allow to cool a bit before eating — the center will be very hot.
