    Place 4 cups of crispy chow mein noodles (or thin crunchy rice noodles) into a large shallow serving platter or bowl. Add 1 cup of crushed tortilla chips on top, then scatter the shredded iceberg lettuce evenly over the crunchy base. This creates the haystack's textural foundation.

Protein & Beans

    If using raw ground beef: heat a skillet over medium-high heat, add 1 tsp neutral oil, then 1 cup ground beef. Cook, breaking up with a spatula, until browned and cooked through, about 6–8 minutes. Season with 0.25 tsp salt and 0.25 tsp pepper near the end. Drain any excess fat. If using pre-cooked meat or shredded poultry, reheat gently in the skillet until hot (2–3 minutes).

    Stir in the rinsed and drained black beans (1 cup) and optional 0.5 cup pinto beans into the hot meat and warm through for 1–2 minutes so beans are heated but not falling apart. Remove from heat.

Sauce & Flavoring

    Pour the sauce over the hot meat-and-bean mixture and stir gently to coat evenly. The warm protein will absorb some sauce, bringing flavor into the haystack's heart.

Assembly & Toppings

    Spoon the warm sauced protein-and-bean mixture in an even layer over the prepared crunchy base (noodles, chips, lettuce). Use all of it so every portion gets protein.
