House Big Mac Sauce

Combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, white wine vinegar, granulated sugar, onion powder, garlic powder, paprika, and a pinch of salt in a small bowl. Whisk until smooth. Taste and adjust seasoning. Refrigerate while preparing the burger to let flavors meld (at least 15 minutes).
Burger Patties

Divide the 1 lb ground chuck/brisket blend into two equal portions (about 8 oz each). Handle meat as little as possible to avoid compacting.

Form each portion into a loose ball, then flatten into a patty about 3/4 inch thick and slightly wider than the bun (it will shrink while cooking). Make a shallow dimple in the center of each patty with your thumb to help even cooking.

Season both sides of each patty generously with kosher salt and freshly ground black pepper just before cooking.

Heat a heavy skillet or griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and spread to coat. When oil is shimmering (but not smoking), add the patties.

Cook patties 3–4 minutes on the first side without pressing, until a deep brown crust forms. Flip and cook another 2–3 minutes for medium (internal temperature ~140–145°F / 60–63°C). Adjust time slightly for desired doneness.

Remove patties from the pan and let rest on a plate for 2 minutes while you toast the buns and assemble.
Buns & Assembly

On the bottom bun, spread about 1 tablespoon of the house Big Mac sauce. Add half of the shaved iceberg lettuce and two tomato slices (or arrange as desired).

Place the cheesy burger patty on top of the tomato. Add a few red onion rings and pickles if using.

Spread another tablespoon of sauce on the top bun and place it on the burger. Press lightly to settle the layers.

Serve immediately with fries or your preferred sides.
