Inspect oysters: discard any with cracked shells or that do not close when tapped. Rinse shells under cold running water to remove grit.

Fill a large shallow serving tray with crushed ice and sprinkle sea salt over the ice to help stabilize oyster halves. Leave enough room to nest oysters on a slight tilt for easy slurping.

Shucking
Put on a protective glove or fold a thick towel over your hand. Hold an oyster flat-side up, hinge toward you. Insert the oyster knife at the hinge, twist gently until you feel the shell pop. Run the knife along the inside of the top shell to sever the muscle and remove the top shell. Tilt the oyster slightly to drain and use the knife to sever the bottom muscle, keeping the oyster level to retain its liquor. Repeat for all oysters and arrange the half-shells on the prepared ice bed.

Keep oysters chilled on the ice while you finish sauces and garnishes. Cut lemon into wedges and place on the tray.
Classic Mignonette

Combine red wine vinegar, minced shallot, black pepper, and fine sea salt in a small bowl. Stir and let rest 5–10 minutes to allow shallots to mellow and flavors to marry. Taste and adjust salt or vinegar if desired. Transfer to a small serving bowl.

Spoon a small amount (about 1/2 teaspoon) of mignonette onto each oyster or serve on the side so guests can dress their oysters.
Spicy Citrus Sauce

Whisk together lime juice, orange juice, Sriracha, soy sauce, and cilantro in a small bowl until combined. Taste and adjust heat or acidity. Place in a small serving bowl and label as spicy sauce for guests who want a kick.

Drizzle about 1/4 teaspoon on selected oysters or allow guests to add more to taste.
Herb Butter & Garnish

In a tiny bowl, blend the softened unsalted butter with chopped chives until smooth. Place a very small dollop (about 1/8 teaspoon) on a few oysters for a rich option — the butter will gently melt against the chilled shell liquor.

Arrange the shucked oysters on the ice bed so each sits level in its half shell. Place the small bowls of mignonette, spicy citrus sauce, and herb butter on the tray within easy reach.

Garnish the tray with lemon wedges. Serve immediately to ensure oysters are cold and fresh. Recommend guests eat oysters within 20 minutes of plating for best texture and flavor.
