Prep and season
Pat the chicken tenderloins dry with paper towels. In a shallow bowl combine flour, cornstarch, 0.5 tsp salt, 0.5 tsp pepper, paprika, and garlic powder. In a second shallow bowl whisk the egg with milk. In a third bowl combine breadcrumbs, panko (if using), and the remaining 0.5 tsp salt and 0.5 tsp pepper.

Bread the tenders
Working one at a time, dredge each tenderloin in the flour mixture, shaking off excess, dip into the egg mixture, then press into the breadcrumb mixture until evenly coated. Place breaded tenders on a plate and let rest 5 minutes (helps coating adhere).

Cook
Heat a large skillet over medium heat and pour in vegetable oil to reach about 1/8" depth (about 1/2 cup). When oil is hot (a breadcrumb sizzles when dropped in), add tenders in a single layer without crowding. Cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a paper towel–lined plate to drain. If cooking in batches, keep finished tenders warm in a 200°F (95°C) oven.

Prep potatoes
Preheat oven to 425°F (220°C). Wash and scrub potatoes; leaving skin on for texture. Cut potatoes into 1/4–1/2" fries (match thickness so they cook evenly). Soak cut potatoes in cold water for 10 minutes to remove excess starch, then drain and pat dry thoroughly with a clean towel.

Season and bake
Toss dried potato sticks with olive oil, 3/4 tsp salt and 1/4 tsp pepper in a bowl until evenly coated. Spread in a single layer on a rimmed baking sheet lined with parchment, leaving space between pieces. Bake 18–22 minutes, flipping once halfway, until golden and crisp at edges. For extra crispness broil 1–2 minutes at the end while watching closely.
Fruit Side

Rinse fruit and dry. If using grapes, halve large grapes. If using apple slices, toss with 1/2 tsp lemon juice to prevent browning. Arrange 1 cup of fruit per serving in a small ramekin or on the plate.
